Caprese Pasta: a recipe, of course…

Caprese Pasta Recipe

This caprese pasta is so stupid easy, perfect for summer, and will make you want to mangia mangia ’til you puke.

Caprese Pasta

2 large handfuls of fresh basil
softball size ball of fresh mozz
2 small Roma tomatoes
1/2-3/4 cup olive oil
1 box pasta

Cook the pasta how you like it (Mike likes al dente, I like it mushy, and my niece Lucy likes it straight out of the box.). While the pasta does its thing, chop up the tomato, mozz and basil. Or, ask one of your kids to do that and go paint your nails one of my fave shades. Mix everything together at the very end (including the olive oil) – of course. Boom. Caprese pasta.

Then, you scarf.

Perhaps you could also do me a favor and drink a glass of your favorite grown up grape juice with this gourmet? No vino for me-o these days. Halp.

    This is one of my go-to summer recipes! Sometimes I add a little pesto if I have time to make it, but we’ve got an abundance of tomatoes and basil in the garden come mid-summer, and this is a once-a-week kind of dinner that the kids always scarf!

    Mmmmm…

    I’m doing a no-sugar, no-white-bread thing (booo….) so I’ll have to try this with whole wheat pasta to get my pasta-cravings satisfied.
