In my never ending (please, let it have an end) quest to rid my pantry and fridge of things we just won’t eat, I whipped up these guys for my gal. They were, of course, super easy. Why else would I make them?
Ingredients:
2 cups sweet potato flour
1/2 cup sugar
2 tsp baking powder
1 tsp salt
1 egg
1 cup milk
1/2 cup apple sauce
cinnamon to taste
vegetable oil
Directions
1. Preheatcha oven to 400F
2. Grease a muffin tin
3. Mix your dry in one bowl and your wet in another
4. Combine and stir just until mixed; I had homemade apple sauce so it was a little thicker. I used the veg oil to loosen up the batter a bit. If you don’t need to, just omit the veg oil. You could also use coconut oil, I’m sure.
5. Bake for 20-25 min; makes 12
The Verdict?
Incredibly average, per usual. She did like them, and I did too. She scammed some of mine when she was done. Just so you know, they are incredibly moist, but dense. They’re almost a meal in themselves. Almost.
