Mike said, “You know what would take this meal up a notch? Ground beef!” This is coming from the man who forgets to abstain from meat every.single.Lenten.Friday. Except that time he had the flu. Because he didn’t eat anything.
So, what is this miracle meal? Bean burritos, of course. It is culinary genius – mainly because it requires heavy can opening skills and a prerequisite that you know how to preheat an oven.
Ingredients:
1 pkg of 8-12 soft tortillas
2 cans refried beans
1 pkg shredded cheese
salsa
sour cream
Directions:
-Preheat your oven to 350F
-Mix cans of beans with half of the bag of cheese
-Fill tortillas with bean mixture and roll
-Place seam down in a baking dish
-Cover with foil and bake for 20 minutes
-Top with rest of cheese and bake until cheese is melty
-Serve with salsa and sour cream
I didn’t include a picture because it is a bean burrito, and I think you get it. Also, we ate them already, so opportunity missed. Bean there; ate that.

My stomach is growling. That sounds so good! I’ve had a hard time with no meat this Lent (I think it’s the pregnancy and the constant desire for protein), but this meal sounds like something I can get on board with. David would love this too instead of our normal PB and J or pasta. Silly question – do you wrap each burrito in foil individually? Or do you just place a large sheet over all the burritos?
Have you tried making your own refried beans? So easy and so much better than canned! I did last week and will never go back to the cans, if you have a crock pot it’s so worth a try!!!

We eat burritos and wraps like crazy here to use up meat. I also make roasted corn salsa & top it on everything–a great meatless treat. I haven’t made burritos this way though. I’m gonna try it.

I love this stuff, too. Love my Tex-Mex! My husband would say the same thing, though: Where’s the beef?
